July 4th, 2006
I've wanted a big smoker ever since I
started using the smaller one one the back patio. Now I have one. Cooks quite
well but is "cosmetically challenged". I'll work on that but want to keep it
operational while I am working on it.
The first thing I cooked (while Edie
Karpinski and Ross were here the week before the 4th) was brisket and a rack of
ribs. Turned out so pretty and tasted so good I was probably obnoxious about
showing it off.
For the 4th I had mentioned to Daryl that
I wanted him to see if he could find us a pig. Next thing I knew he had bought
one so that became the plan. Turned out pretty well.
On the end of the smoker where the smoke
exhausts there is another smoker box with a shelf. It is big enough to hold two
turkeys at once. I've not yet done a turkey but I'm sure that will happen just
after I find one cheap enough. Experimenting is fun but I don't want to pay the
current prices for turkeys; I'd rather pay Thanksgiving prices.
