Mimi's Recipes

Granola                            Vanilla Ice Cream

 

Sylvia has mentioned a few times that she was unable to find Mimi's Granola recipe. I think during those conversations I heard that Bob and Carolyne did not have it either.

We recently saw an old friend (Edie Karpinski) that we don't see often enough and she had some granola out on the counter in her kitchen. Sylvia tried it and told her she wanted the recipe because it was so good. Edie was surprised to hear that she did not have the recipe because it was Mimi's. Edie and Mimi liked each other quite a bit and Mimi had given it to her years ago.

 

So, if you already have it then this is just a story but if you have lost the recipe over the years then here is:

 Mimi's Lost Granola Recipe

3 cups old fashion 1 minute oats

3 cups corn flakes (broken by hand with oatmeal)

½ cup wheat germ

1 cup chopped walnuts

1 cup chopped pecans

1 cup sliced almonds

1 cu sunflower seeds

1 cup shredded coconut

1 can (14 oz.) sweetened condensed mixed with 3/8 cup canola oil

 1 ½ cup raisins

 Combine oats, corn flakes, wheat germ, nuts and coconut in a bowl. Add condensed milk and oil and mix thoroughly.

 Spread mixture in 1 or 2 Pam lined shallow pans.

 Bake in 300 degree oven for about an hour or until golden brown. Stir about every 15 minutes.

 Remove from oven and stir in raisins.

 Store in tightly covered container in refrigerator.

 

Recipe can be doubled as it will keep well.

Mom’s Ice Cream                 (Found By Uncle Bob)

Ingredients:

6 cups milk

4 cups Half & Half

4 eggs

1 ½ cups sugar

1 tsp salt

3tsp vanilla extract

 Combine sugar, milk, half & half, and salt

Heat until about to boil (scald)

Add beaten eggs and stir well

 Allow to cool

 Stir in vanilla

 Freeze and eat, Yuuummmm!
